- English: Oats are a precious cereal for the well-being of the body, they are a source of fiber, vitamins, proteins and many other nutrients. Compared to other cereals, even when processed they maintain the germ and bran that contain most of the nutrients, therefore they are a much more complete and healthy food. From a nutritional point of view, oat grains are mostly composed of starches and carbohydrates (60-70%), but they are an excellent source of vegetable proteins (about 15%) and good fats. Their peculiarity is that they release energy for many consecutive hours thanks to their molecular structure that is digested very slowly and gradually by the intestine. Another aspect to underline is that they do not cause significant peaks in insulin levels in the blood. Compared to other flours, oats have 5 essential amino acids , indispensable for the correct functioning of the body, which alone cannot synthesize them and therefore must be taken with food. Oat flour contains the EAA Phenylalanine, Isoleucine, Leucine, Methionine and is particularly rich in the amino acid Lysine , which is generally lacking in cereals. It is therefore considered an excellent ally in slimming diets . Oats provide approximately 370 kcal per 100 grams, therefore it is not a low-calorie cereal but its characteristics make it the ideal substitute for soft wheat in slimming diets. It is in fact a low glycemic index food, with a high satiating power that helps control hunger pangs.
